I am starting my week of soups with a creamy broccoli, cheese and bacon soup. Packed with healthy fresh vegetables and coconut milk makes a perfect soup to take to work for your lunch or to serve as a starter for supper. A bowl of broccoli, cheese and bacon soup is only 9 net carbs per portion.

My recipe makes enough soup for four portions. A perfect amount to see you through the week for lunch. Keep in the fridge and heat as required; put in a thermos flask and it will keep warm until lunch time. A easy and nutritious lunch.
Broccoli, Cheese and Bacon Soup
A nutritious soup packed with fresh vegetables and bacon.
- 25 gm unsalted butter
- 4 rashers unsmoked bacon chopped
- 1 small onion - small dice
- 2 medium carrots - small dice
- 3 stalks celery - small dice
- 200 gm broccoli - split into florets
- 400 ml coconut milk
- 100 ml double cream
- 400 ml water
- 2 cloves garlic
- 150 gm grated cheddar cheese
- Salt and pepper for seasoning
In a large saucepan, melt the butter and add the bacon, onion, carrot and celery. Add half the water, cover and then cook for about 10 minutes or until the vegetables are soft.
Add the cream, coconut milk, remainder of water, garlic and broccoli. Stir and bring to the boil. Season with salt and pepper as required. Cook for a further 10 minutes until broccoli soft.
Incorporate the grated cheddar and stir until melted.
Check seasoning before serving
